Simple meal and dessert recipes that I have collected over the years from different media outlets (and some of my own), have helped me in preparations for my busy family of six. In my thirty something years of family cooking, I have discovered that simplicity works the best in flavour and time management. Seafood Stuffed Shells
Ingredients
For the Shells:
20 jumbo pasta shells
1 cup ricotta cheese
1 cup cooked shrimp, chopped
1 cup cooked crab meat (or imitation crab)
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1 clove garlic, minced
1 tbsp fresh parsley, chopped
1 tsp lemon zest
Salt and pepper to taste
For the Sauce:
2 cups marinara or Alfredo sauce (store-bought or homemade)
For the Topping:
1/2 cup shredded mozzarella cheese
1/4 cup breadcrumbs
1 tbsp melted butter
Fresh parsley or basil for garnish
Instructions
Cook the Shells: Preheat your oven to 375°F (190°C). Cook the jumbo shells according to the package instructions until al dente. Drain and set aside.
Prepare the Filling: In a large bowl, combine the ricotta cheese, shrimp, crab, Parmesan, mozzarella, garlic, parsley, lemon zest, salt, and pepper. Mix until well combined.
Stuff the Shells: Spoon the filling into each cooked shell, pressing gently to fill completely.
Assemble the Dish: Spread 1 cup of sauce on the bottom of a baking dish. Arrange the stuffed shells in the dish, then pour the remaining sauce over the top.
Add the Topping: In a small bowl, mix the breadcrumbs and melted butter. Sprinkle the breadcrumb mixture and mozzarella cheese over the shells.
Bake: Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and golden.
Garnish & Serve: Let the dish cool for 5 minutes, then garnish with fresh parsley or basil before serving.
